Chicken Bread Salad
Tasty chickenand bread on top of a variety of veggies, a perfect meal for kids and adultsalike.
Ingredients
- 24 slices French bread 3/4 inch think
- 3 cups chicken breast cooked and cubed
- 4 pieces medium tomatoes cut into chunks
- 1 can greatnorthern beans rinsedand drained
- 1 piece large cucumber seededand chopped
- 1/4 cup fresh basil chopped
- 1/4 tsp salt
- 1/4 tsp pepper
- 3/4 cup balsamic vinaigrette
- 1/2 cup Parmesan cheese shredded
Instructions
- Placebread on a baking sheet.
- Broil3-4 inches from the heat for 2-3 minutes or until golden brown, turning once.
- Cool on a wire rack.
- Cut bread into 1-inch pieces.
- In a large bowl, combine the bread, chicken, tomatoes, beans, cucumber, basil, salt and pepper.
- Drizzle with vinaigrette and toss to coat.
- Refrigerate for 30 minutes.
- Sprinkle with Parmesan cheese and toss.
